Global Private Dining Manager

A distinguished private family is seeking an accomplished and impeccably presented Travelling Private Dining Manager to oversee all dining, service, and culinary operations across their London residence and a portfolio of international homes.

Reporting to the Estate Manager, this senior position requires a highly experienced professional capable of leading both Butler and Chef teams while delivering exceptional, personalised dining experiences for the Principals and their guests.

The successful candidate will demonstrate refined service standards, strong leadership, and the ability to anticipate needs with absolute discretion and precision.

Responsibilities

Department Leadership & Daily Operations

  • Lead and manage the Butler and Chef departments to ensure seamless day‑to‑day operations.
  • Create and oversee monthly rotas, staffing schedules, and annual leave planning.
  • Maintain departmental purchasing lists and ensure premium sourcing of all items.
  • Track and review key priorities for individual team members to maintain focus and accountability.

Service Excellence & Standards

  • Establish and uphold consistent service standards across all residences.
  • Ensure butlers deliver uniform, high‑level service aligned with household expectations.
  • Provide ongoing training, coaching, and performance management for service teams.
  • Act as the senior point of oversight during all dining occasions, events, and formal service.

Dining & Event Management

  • Plan, coordinate, and execute private dining, formal occasions, and special events.
  • Create detailed seating plans in accordance with protocol and guest dynamics.
  • Oversee all table settings and presentation, ensuring aesthetic precision.
  • Work closely with the Lady of the House to ensure all dining elements reflect her vision and preferences.

Guest Experience & Personalisation

  • Maintain a comprehensive guest database that includes global dietary requirements, allergies, and preferences.
  • Ensure all dining experiences are tailored, personalised, and flawlessly executed.
  • Anticipate guest needs and deliver a seamless, discreet service experience.

Culinary Coordination & Procurement

  • Collaborate with in‑house chefs on menu planning, ensuring creativity, seasonality, and excellence.
  • Ensure all suppliers meet the highest standards, with a focus on premium and organic produce.
  • Oversee procurement processes and maintain strong relationships with vendors.

Principal Liaison & Dining Planning

  • Prepare and present weekly dining schedules for Principal approval.
  • Propose themed dining occasions and bespoke culinary experiences.
  • Introduce innovative concepts such as curated high‑end takeaway evenings.

International Travel & Multi‑Residence Coordination

  • Travel with the Principals to support food and beverage operations across global residences.
  • Ensure appropriate staffing levels for all events and occasions.
  • Coordinate deployment of UK‑based service staff for overseas requirements.

Food Safety & Stock Management

  • Ensure all perishable items are correctly labelled and dated.
  • Maintain strict stock rotation and food hygiene practices.
  • Oversee storage, cleanliness, and compliance with best‑practice standards.

Key requirements

CANDIDATE PROFILE

  • Proven experience in a senior food and beverage leadership role within a UHNW household or luxury hospitality environment.
  • Strong leadership background managing both front‑of‑house and kitchen teams.
  • Exceptional organisational, planning, and administrative skills.
  • Highly discreet, professional, and service‑driven.
  • Strong understanding of fine dining, global cuisines, and luxury service standards.
  • Flexible and willing to travel internationally at short notice.
